Cure to preserve. The exsiccation process is one of the cheapest and oldest methods of food processing, to allow it to be preserved over time.
In Fernanda's laboratory the passing of time, inexorable and decisive, is also a precious ingredient to prepare the rescue kits for all cooking enthusiasts: colorful jars full of vegetables, vegetables, herbs, fruit and any product that can be cured and kept.
The art of exsiccation opens the doors to all those flavors, colors and smells that would not be allowed out of season. An art that is both sacred and eco-friendly due to its extreme simplicity and respect for the environment.
